Golden Sweet Corn Bread


Ingredients
2 cups warm water
1 TBSP yeast
1/4 cup tahini
1/4 cup honey
1 1/2 tsp lecithin (optional)
1 1/2 tsp sea salt
2 TBSP soy flour
2 1/2 cups yellow corn meal
2 cups whole wheat pastry flour
Description Enjoy this light, crummy and sweet corn bread.
Instructions 1. Dissolve, yeast and honey, and nut/seed butter in water.
2. Add dry ingredients together. Stir only enough to get evenly mixed.
3. Pour in greased baking dish, not thick. Let rise in warm place until doubled.
4. Bake in preheated oven at 350 F for 40 minutes or until golden.

Note When sliced thinly and dried thoroughly at low heat in the oven, this bread make a delicious light and crumbly sweet toast.
Variation:
To add a delicious dimension the corn bread add to the dough:
¾ cups of raisins
½ cups of finely crushed hazelnuts
