Just Like Potato Chips


Ingredients
1 1/2 kg Potatoes, scrubbed clean, unpeeled
2 tbsp extra-virgin, cold-pressed, olive oil (optional)
1/4 cup fresh lemon juice
1 tbsp onion powder
2 tsp sea salt
2 tsp cumin
1 tsp ground coriander
1 tsp sweet paprika
1/4 tsp garlic powder
Description Watch your fingers. . . these are addictive!
Instructions 1. Soak potato slices in plenty of drinking water overnight.
2. drain the starchy water well.
2. Add rest of ingredients to well-drained potato slices and toss very very well. Lay out quickly on dehydrator trays.
3. Dehydrate 12-16 hours at 105 F or until crispy.
4. If they last, store in an airtight jar.

Note These chips are not very nutritious because much of the nutrients are leached out in the soaking water. But if you are craving an old favorite or want to introduce your family and friends to better alternative than the regular simply poisonous potato chips, this recipe is perfect.
You can save some of this potassium-rich potato water used to soak the potatoes and use it in cooking or as the base of a vegetable soup if you would like.
You can also create chips like these using sweet potatoes.
If you do not have a dehydrator, try placing the chips in the oven on the lowest possible setting and see if it works.
